Cooking

Today, [livejournal.com profile] adaese has made / is making:
- beer bread
- jam tart
- sweet potato pie
- creamed parsnips
- three huge pots of beef casserole, with four and a half pounds of meat
- marrow and ginger preserve
- fresh orange juice, for breakfast
- toasted ham and cheese sandwiches, for lunch.

And I've done all the washing up!

We have also picked a few blackberries, which we have put in the freezer; and [livejournal.com profile] adaese bought some raspberries on Friday, which have also gone into the freezer.

Sounds like a lot of cooking for one day. Could we have the recipe for creamed parsnips? Foradan loves parsnip (I had never had them before I met him) and the only thing we actually know what to do with them is roasting them, so we don't have them as often as we would like.

We're having a special supper too. We're having a chestnut and lentils roast, mushroom gravy, runner beans and foradan is having pork chops. No time to cook a dessert as well, that's for tomorrow. Some of these things (chestnuts and runner beans) are special for us because they're hard to get and we can only get them occasionally.

Our brambles were stripped and put up yonks ago. Mad dash, really.

That's a lot of food. Put's my 2 gallons of chioken broth to shame - and I thought I was cooking a lot!

Peel, cut into even-sized chunks, boil till tender (about 20 minutes), then mash with butter & milk or cream (depending on how smoothly rich you want them - lots of butter & cream is very very nice indeed). Then into a well-buttered dish, with a bit of grated cheese in the middle - cheddar works well - and more cheese and a few breadcrumbs on the top. Then into a medium hot oven to brown - 30 minutes or so.

I had drunk some bottle-conditioned beer the day before, and [livejournal.com profile] adaese added the yeast-rich dregs to a loaf she made. It tastes very good!

For an 8" pastry shell, I find about three sweet potatoes, peeled, boiled & mashed with a generous knob of butter, and enough milk or cream to make a fairly soft mash. Add sugar & mixed spice to taste - I normally add a little molasses at this stage, and was vaguely surprised to see on checking my recipe books that none of them mention this. Then three eggs, pour into pastry case, and bake in medium oven (about 180C) for about 40 minutes.

Very good served lukewarm!
