1) roasted red pepper dip 2) carrot cake 3) if it's packet stuff, it will last for years. If fresh, I second the suggestion for pasta sauce with lots of vegetables.
sounds like the making of a stir-fry to me. I'd recommend adding sliced mushrooms and quartered small onions (or larger ones cut smaller). Pak or bok choi would also be nice. You will need to add some protine, sliced chicken or seafood would be good. Use the linguini as noodles (it won't be quite right, but reasonably close).
- peperonata (works well on pasta, too) - there is a nice pasta sauce made with tinned tomatoes, lots of grated carrot and crumbled sausagemeat - risotto with peppers (add at same time as the onion)
Carrots: you could try Jam. Carrot cake? There's probably a good reason why you don't hear many people saying they make Carrot Wine, and if desperate, you could find out what that reason is.
Pasta. It will keep if you don't fancy it. If fresh, you can freeze it.
Any of the above you can put by your path with a jam-jar saying 'please take: donations to (Charity you like) welcome'.
Oddly enough people feel bad about taking a carrot that you would otherwise compost, unless you have a jam-jar where you can put a few pennies.
