ETA: Which does, of course, bring to mind the one about the difference between an English actuary and a Scicilian actuary. The English actuary will tell you how many people of a given age are likely to die in the next year. The Sicilian actuary will give you their names and addresses.

Yummy! Now there is an idea for dinner, buttery poached egg. By poached I don't mean the throw a raw egg into boiled water, so it has nasty trailing bits, poached, but using a little pot with shallow receptacles that have butter melted in them, while the eggs cook over boiling water. What is the proper name for this method, I was brought up calling it poached?
