What is wrong with this recipe?

Stilton dumplings

125oz suet
3oz crumbled stilton
250oz flour
seasoning

Mix suet, flour and stilton add a pinch of salt. Stir in about 3tbs of cold water to for sticky dough - you may need a little more water. Get your hands in some flour then roll dough in to 8 balls and set aside.

It's not the Sainted Delia's Frugal Food is it? Though that contains some glorious recipes it is infamous for giving wrong amounts, leaving things out, and putting things in recipe lists that you have to intuit because she doesn't tell you how to use them.

Well as you've quoted it - you haven't made any mention of stew to dump the dumplings in. Even giant dumplings need a bit of stoo to go with them.
